What a surprise to discover that the ugly prickly artichoke produces a beautiful flower.

The flowers appear in the spring and stay throughout the summer. Bees and butterflies love the nectar of the flower and people love the vitamin rich heart of the plant.

If you harvest the vegetable for cooking do it before the flower blooms.

My Mom stuffed and steamed them as an appetizer for holiday dinners.

Here is a recipe similar to how she cooked them, substituting chopped onion for the garlic.
