Having mild winters and hot summers water temperatures stay high in the Southern US. The slow moving rivers and streams are good for the warm water fish. Catfish are easily identified by their smooth skin, and whiskers. They swim close to the shore and at the lowest level of water. They are scavengers and predators.

Culturally catfish are included as a popular food in Southern cuisine. You will see this dish on menus throughout the south due to availability and affordability . It is best served fried to mask its muddy or gamey flavor.
