On Friday May 30, 2025, Oregon opened its first Jollibee, the popular Filipino fast food chain. Best known for their Chickenjoy fried chicken, the menu also offers a variety of comfort foods, including Jolly spaghetti.
We waited a few days after the opening to try it out. The line to get in was well organized by the staff, and we managed to find indoor seating. I ordered a chicken sandwich, and it was crispy, fresh, and delicious. I also had a raspberry iced tea, and it was really good.
The restaurant offers, dine-in, dine-out, take-out, and drive-thru pickup. And to skip the line orders can be placed and paid for online in the app.
The question today is, ” will the chicken joy sandwich take first place in the chicken sandwich war” ? Maybe, but Chick fil-a has the most efficient, courteous, fast moving drive thru and is hard to beat.
The Hillsboro restaurant is located at the Tanasbourne Village shopping center on NE Cornell Road.
