Sprinkles on the cake

I made a last minute change today in the menu for our family dinner tomorrow.  Instead of baking the traditional Italian cookies I decided to surprise the children with a homemade fudge cake with vanilla icing.  This was always a birthday favorite for them and I have not baked it in many years so it seemed like a nice surprise.

The recipe comes from my elderly Aunt. As with other family recipes, these are passed down many times so adjustments may be necessary.  They also didn’t use measuring cups or spoons just the palm of the hand.  No electric mixers, mix by hand until all the lumps are gone.

I have also used evaporated milk instead of whole milk and that works. One important thing is to bake it in 8″ round pans and not 9″.

Cream together:

2 cups sugar

1/4 & 1/2 stick softened butter

add in 4 eggs, one at a time

add 4 oz of melted dark unsweetened chocolate

add 3/4 cup milk

add 1 tsp. vanilla

Mix 2 tsp. baking powder into 1 cup flour, then mix into batter

Bake at 350º for 35 minutes

Ice as you please ( I like vanilla on it) and I put red sprinkles for the Holiday

The recipe measurments worked out. Very fudgy and 35 minutes was perfect.
